It is soluble in water (58.5 g/100 mL at 100 °C), as well as in ethanol and Propylene Glycol (also known as Propane-1,2-Diol), and is slightly soluble in Acetone, Corn Oil, Chloroform, and Ether. 

Potassium Sorbate is produced synthetically for commercial and industrial use, most often done by using Potassium Hydroxide to neutralize its precursor, Sorbic Acid. It can also be found naturally in berries. 

Potassium Sorbate is used in food at quantities (generally between 0.025% and 0.1%) with no known near term health effects at such levels, making it a valuable and responsible component for the production and preservation of food products. The recommended maximum daily intake for human consumption is 25mg per kg of body mass. Its variety of uses and applications are primarily as a food preservative, though it has uses in agriculture, animal nutrition, personal care, and pharmaceuticals as well. Nutritional labels will often include Potassium Sorbate as an ingridient, either writing its formal name or simply as its E Number, "E202". 

One of the most common food applications of Potassium Sorbate is to prevent the presence of molds, yeasts, and microbes, thus increasing the shelf life of food products. This preservative use is often applied to dairies like cheese and yogurt, alcoholic beverages like wine and hard cider, soft drinks, sweets, sweeteners and confectionary foods, fruit-based products like juices, as well as for dried and salted meat products. Often used in sweet wines, Potassium Sorbate is applied in conjuction with Potassium Metabisulfite in order to prevent refermentation. In wines, Potassium Sorbate serves the function of preventing further growth of yeast, thus diminishing the exten to which the wine can continue to ferment and generate alcohol and CO2. 

Potassium Sorbate can alternatively be used as a preservative in animal nutrition and feed products, as well as in non-food personal care products as an inhibitor of microoganism development.
